Cupcake Recipe with Castello Del Poggio Moscato
Total time: 40 minutes
Prep time: 22 minutes
Cook time: 18 minutes
Serves: 18 cupcakes (you can easily double or even triple the recipe for a larger celebration)
- Flour (all purpose) 1 ¾ cups
- Baking soda (½ tsp)
- Baking powder (½ tsp)
- Salt (¼ tsp)
- Unsalted butter (melt or at room temperature) ½ cup
- Sugar (granulated) 1 cup
- Eggs (2)
- Vanilla (½ tsp)
- Sour cream (½ cup)
- Castello Del Poggio Moscato (½ cup)
- 3 mixing bowls
- Cupcake or muffin tin
- Cupcake liners
- Castello Del Poggio Moscato (1 cup or more)
- Melted, unsalted butter (1 cup)
- Confectioners’ sugar (2 ½ cups)
Line a cupcake or muffin pan with cupcake liners, and preheat your oven to 350°F.
In a medium or large mixing bowl, add flour, baking powder, baking soda, salt, and whisk/mix together until the ingredients are completely combined.
In another mixing bowl, beat the sugar and butter so the texture is fluffy and completely combined. This should take anywhere from 2-4 minutes. Next, add one egg and beat well. After the mixture is combined, add the second egg and beat. Add vanilla extract and continue to mix.
In a third mixing bowl, add the ½ cup of Castello Del Poggio Moscato and sour cream (½ cup). Mix together and enjoy the slight fizz of the Moscato as it combines with the sour cream! Next, add in the flour mixture alternating with the Moscato mix, blending on low until smooth.
Now that all the ingredients are incorporated, fill your muffin or cupcake tin with the liners with the combined mix.
We also suggest making Moscato cupcakes with cake mix, i.e., any standard mix you can pick up at the grocery store if you are in a pinch or looking to save time. Cooking with a cake mix will cut down your overall (total) time in half. Use the baking instructions on the box or cake mix container.
Fill the liners almost to the top. Bake for 18-20 minutes or according to the cake mix instructions on the back of the box or container.
Use a toothpick after the time has elapsed to check the center of the cupcakes. The toothpick should come out clean and without any mixture sticking. Let the cupcakes cool on the counter or cooling rack. This is important for the next step, the frosting!
Use a medium-sized saucepan, add a cup of Castello Del Poggio Moscato, and allow the liquid to simmer over medium to medium-high temperatures until the mixture has reduced to around two tablespoons or more.
Empty the liquid into a small bowl and allow five minutes to cool. Next, whisk the butter and powdered sugar together until soft and light. Add the reduced Moscato into the bowl and add one more splash of Moscato to the mixture. Mix well. Frost your cupcakes and enjoy!
